Ingredients list for a perfect Friday evening; it must kick off a three day weekend, cool crisp evening air, a fire in the back yard pit and the perfect sipping sensation.

Here in the Northwest, it is the last weekend of summer before school begins. Gathering friends together for great food, delicious cocktails and engaging fellowship is what an excellent long weekend is all about.  I’ll save a seat for you.

I firmly believe that Bourbon and fire are splendid companions and Shaun the Bartender has a superb cocktail for sharing with great friends this holiday weekend. While Shaun likes this soothing libation just before the sandman comes calling, I prefer to toss one or two down while watching flames lick the cool evening air.

The Apollo CocktailApollo Cocktail

  • 1 1/2 oz. Bourbon Whiskey
  • 3/4 oz. Kahlua
  • 3/4 oz. Half and Half

Method:  In a mixing glass filled with ice, pour in the measured amounts of all the ingredients.  Cap off with a tin and shake well.  Strain into a chilled cocktail glass.  Garnish by dropping in a maraschino cherry.

When I get done having a nice hearty meal, I find myself looking for something to finish it off that will get me more relaxed and ready for sleep.  A nice creamy cocktail is always the way to go under these circumstances.  – Shaun Daugherty
