This time of the year in the Northwest brings small glimpses of spring and summer. The high temps for the day in June can range anywhere from the high 50’s, yes, really, to the 90’s. The average high for June is 70 with a good thick layer of coastal marine air. So as you can well imagine, when the sun comes out, it’s time to celebrate.
This week, we are going to have exceptionally beautiful weather and that means it’s time for cool treats for the fam and a few adult freezy treats of our own.
Strawberry Peach Vodka Collins Popsicles by EndlessSimmer. These are incredibly simple to whip up, are full of flavor and the recipe makes 12 juicy summer sensations. They may taste like a harmless warm weather treat and they are loaded with vodka. Shopping list; Strawberries, peaches, water, sugar and vodka. Full Recipe
Thin Mint Boozy Shake by Redbook. It seems that each Christmas the children run around with cans of soda, while the adults hold “special milkshakes” and eggnog. While they are fantastically delicious during the holidays, a hot summer day seems to be the perfect time to indulge in a cold, creamy, boozy treat. My favorite part about these is that any flavor or flavor combination is possible, as you can see in this post. The shopping list is simple; Valrhona chocolate ice cream, Rumple Minz and thin mints to crumble on top. Recipe Here.
Sgroppino al Limone – An Italian Cocktail by bell’alimento. We are loving this delightful concoction as an after dinner treat. This refreshing lemon flavored cocktail is perfect for reclining in your hammock or sitting on the back deck while the grill is cooling. Filled with Limoncello and Prosecco, this delicious treat can sneak up on you quickly. Shopping list; Limoncello, Lemon Sorbet or Gelato, prosecco and fresh mint. Recipe Here.
Aha! The Sgroppino sounds delicious! And I just happen to have several bottles of “homemade” Limoncello….
Nice!
Gonna have to try that Italian Cocktail…as my grandson would say – “Nummy”
Talk about some winners! We were in Portland a few weeks ago and people kept apologizing for their weather. We loved it.
